Cooking Recipe: Little Cheese Balls


Cheese is a food derived from milk, produced in a wide range of flavors, textures, and forms. It consists of proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. It is produced by coagulation of the milk protein casein. Typically, the milk is acidified and addition of the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have molds on the rind or throughout. Most cheeses melt at cooking temperature.  source: wikipedia

Ingredients: (serves 3-4 persons)

  • 100 gr cream cheese
  • 100 gr yellow cheeses
  • 80 gr parmesan
  • 50 gr toast
  • 40 gr black currants (or raisins)
  • 40 gr walnuts (or pine nuts)
  • 2 tbs of porridge
  • some mint, nutmeg and pepper
  • a little salt

Instructions for Preparation:

Put the cream cheese in a plastic bowl and macerate with fork, add the nutmeg and grated yellow cheeses, porridge and raisins, mix well. Add the chopped mint, chopped walnuts (or pine nuts), salt and pepper. Knead the mixture well and we make small balls. Preparing a second mixture with finely grated parmesan cheese and toast, mix it well and also roll the balls in it to cover their surface. Put the little cheese balls in refrigerator to make it cold until we serve.
