Cooking Recipe: Pirozhki (Russian Cuisine)

Russian Cuisine

Pirozhki (plural form of pirozhok, Russian: пирожок, пирожки, which means a little pirog), sometimes transliterated as pyrizhky (plural from Ukrainian: пиріжок), is a generic word for individual-sized baked or fried buns stuffed with a variety of fillings. Pirozhok (Russian: пирожок, singular) is the diminutive form of the Russian cognate pirog (Russian: пирог), which refers to a full-sized pie. source: wikipedia

  • 1/2 kilo flour
  • 1 egg
  • 1 tbs sugar
  • 1 tbs butter
  • 1 tea spoon (not full) salt
  • 30 gr beer yeast
  • milk
  • 1 package cooked mushrooms (for filling)
    • alternatively you can fill them with sausages or cheese or mincemeat or mashed potatoes or various other materials

Instructions for preparation:

Prepare the yeast by adding sugar, 2-3 tablespoons flour and 1/2 cup lukewarm milk. Let it rise. Sieve the flour into a plastic basin and open a hole in the middle to add the yeast. Also add the egg, salt, butter and so lukewarm milk as needed to make a moderate in thickness dough. Knead well until the dough does not stick in the hands and leave it near to a warm place to rise. Cut the mushrooms into small slices for filling. Once the dough is ready, we divided the dough into two parts and we roll out two sheets in the thickness of a finger. Cut it into slices with a water glass. Place some filling on each slice and fold the two ends sticking carefully. Let it rise on a floured towel. Bake in a moderate oven, or fry them in hot olive oil.
